Dextran, a glucose polymer composed predominantly of ol-1,6-glucopyranosidic linkages, is produced from sucrose by Leuconostoc mesenteroides and related organisms and from dextrins by other bacteria.
Applications:
Binder; viscous control agent; blood plasma substitute or expander; in soft-center confections; lacquers; oil-well drilling muds; filtration gel; food additive; viscous control agent in artificial tear products, topical ophthalmics; as partial substitute for barley malt
